Strawberry Lemon Ice Lollies

For dessert today I made these strawberry and lemon ice lollies:

 and thought I'd share the recipe with you all.

You will need (for 12 in moulds the size of mine):

~ 400g Strawberries (sans green part)
~ 300ml Plain or Greek Yoghurt
~ 75g Icing Sugar
~ A Squeeze of Lemon Juice
~ Lolly Moulds - I got these appropriately coloured ones from Ikea for about £2

And you simply:

~ Measure out the yogurt and place into a bowl.
~ Place the strawberries and sugar into a food processor or blender and whizz until liquid (or you could mash them up with a fork/your hands)
~ Sieve the strawberry and sugar smoothie into the bowl of yoghurt and mix together well.
~ Add a squeeze of lemon juice to taste, I like about 2 tablespoons.
~ Spoon into your mould (remembering that the will expand slightly when frozen)
~ Freeze until frozen (obviously) and gobble up like we just did:

If you don't fancy yoghurt, or you have issues with dairy, you can substitute for fruit juice, but I would reduce the sugar a bit. 

You can also use any other type of fruit, the soft ones work best, raspberry, peach, mango etc, but I have made these with blueberry and apple which were yummy too.
